3 Tablespoons olive oil
3 Carrots, peeled and thinly sliced
4 Green onions, sliced
2 Large apples, unpeeled, cored and diced
3 Cups cooked brown rice
1/2 Cup craisins or raisins
12-ounce package slivered almonds, toasted Salt and pepper Heat oil in large skillet over medium heat; add carrots and cook 5 minutes. Add onions and apples; cook 5 minutes. Stir in rice, craisins and almonds. Add salt and pepper to taste. Cook, stirring frequently, until rice is heated through. Makes 6 servings. ∆
